It’s that time of year again when Vacherin makes its way on to our festive cheeseboards! This is a classic staple of any cheese lover’s winter repertoire. Hailing from the Swiss/French border of the Alps mountains, and with a history that dates back to the 13th century, this seasonal favourite rich in Alpine cows milk is strapped up in spruce bark, which not only stops it from collapsing, but also imparts a resinous, woody, earthy, nutty flavour to the cheese.
Pair this luscious, decadent cheese with a bold wine such as Bordeaux or a fine bottle of Champagne. Other pairings which work well are a Gewürztraminer or an Alsatian Riesling or even a fruity, Beaujolais.
